A Treasure of Sicily

"Nonno Giulio" Organic Oil

Giulio Viola, born in 1932, and his grandson Pietro, born in 1989, proudly uphold a family tradition of olive oil production that spans generations. Our extra virgin olive oil (EVO) "Nonno Giulio" represents the pure essence of Sicily: a high-quality organic product, obtained with passion, research and sacrifice, respecting nature and knowledge handed down over time.

Our oil is made exclusively by cold pressing olives harvested from our family olive grove within 24 hours prior to milling.

The oil, extracted using state-of-the-art machinery, is an 'early-harvested' extra virgin olive oil from Nocellara del Belice (90%), softened by a small percentage of Biancolilla (10%), both native varieties of Sicily.

This oil stands out for its unique aromatic profile: a perfect balance between bitter and spicy, with hints of tomato leaf, fresh grass, mint and sweet almond.

We recommend using our oil to dress and enhance vegetables, salads, legumes, soups and meats from the day after pressing. For use on fish, we recommend using it once it has "rested" for 5-6 months after pressing.
